As fruits were preserved and kept for the cold season, dried fruits like dates, figs, prunes, apricots, and raisins have a long history of adding summer sweetness to winter recipes. Allow these delicious recipes with dried fruit to brighten your meal.
Ingredients:
4 pounds of lamb or beef cubes
1 and 1/2 cups Dried Prunes
1 and 1/2 cups Dried Apricots
1 cup slivered almonds, toasted
1/4 cup olive oil
2 large onions sliced
2 tablespoons sugar, 2 pinches saffron, 1 teaspoon turmeric, 1 tablespoon grated ginger, 3 Geffen Cinnamon Sticks, 1 teaspoon ground pepper, 1 tablespoon ground cinnamon
Let’s Cook!
Cook the Meat:
First, In a heavy, large pot, bring the meat and water to a boil. Cover and cook for two hours on medium heat.
Prepare the Sauce:
In the meantime, in a large skillet, heat the oil. On medium-high heat, add the onions and cook until golden brown then, Cook for a further minute after adding the sugar.
Spices:
After the meat has cooked for two hours, add the fried onions, saffron, turmeric, ginger, cinnamon sticks, and ground pepper, and let it cook for 45 more minutes.
Dried Fruits:
Add the ground cinnamon and dried prunes and dried apricots and it should cook for 15 more minutes.
Serve & Enjoy:
Using a slotted spoon, move the fruit and meat to a platter. Reduce the heat to a high setting until the liquid thickens, then pour it over the meat if it is too thin in the pot. lastly, Sprinkle the almonds over the dried fruit tajine just before serving.
