Pistachio kernels are the edible part of the pistachio which is collected after the shelling process. The second type is called Kaal pistachio kernels which are obtained from pistachios that are picked up earlier from the tree and are not fully ripe and often are used for making pistachio powder and pistachio butter. Green peeled Kernel is known for their exquisite green color which is produced from unripe kernels the first purple skin is peeled. These kernels are more expensive than any other kernels. That is why Green peeled pistachio kernels are known as luxury food ingredients in the market. These kernels are classified according to their color (Dark green, Light green, Yellowish green and yellow) the more color is green the grade is higher. This type of kernels is a good choice in the process of producing sausages, chocolates, ham, ice cream, and pastries.
